Dear NYC food industry,
This is a truly sentimental and heartfelt letter of admiration from a vegetarian foodie. I just wanted to tell you how incredibly pleased I was to find a cornucopia of dining options that were targeted towards and created exclusively for the vegetarian-on-the-go. Tonight, as my stomach grew hungry, I stumbled across a salad bar where dreams are made of. That's completely an understatement for how nice it was to select from over 200 tasty ingredients and create a vegetable masterpiece. Rather than always feeling like the odd one out who has to make do with a slice of cheese between two buns at a summer BBQ block party, I have found my place. My people, if you will. I can't thank you enough and I will be sure to indulge in more elaborate salad bars during my time here. And if my thanks isn't enough, talk to my stomach lining that's literally grinning from large intestine to small intestine.
